Why Poker Players Do Chip Flourishes at the Table

Without the chip "flourish" what would you do at a poker table? Eat? Take up sewing or knitting? I think not!! I love learning new tricks it keeps me occupied and helps me stay away from those hands that look good to play but really aren't (Kh6h)..
